MADAIPALLI - MILAGU VADAI

Milagu vadai(pepper vada) is the favorite snack of sri rama bhaktha hanuman so on hanuman jayanthi prepare milagu vada and offer this crunchy snack to anjaneyar.

INGREDIENTS

URAD DHALL(உளுந்து) 1 cup

RICE(பச்சிரிசி) 1 or 2 spns

PEPPER(மிளகு) 1spn

CUMIN SEEDS(சீரகம்) 1spn

ASAFOETIDA(பெருங்காயம்) a pinch

CURRY LEAVES(கருவேப்பில்லை)

SALT TO TASTE

OIL FOR FRYING.


TO PREPARE

  1. Soak urad dhal and rice for not more than 5 mins, after soaking rinse the mixture and keep it aside for 20 mins.
  2. Grind the mixture with salt,asafoedita,pepper and cumin without adding water(just sprinkle some water) and the dough should be coarsely grinded(the urad dhal bits should be visible) but the batter should be thick in consistency.
  3. The batter is ready add some heated oil to the mixture and mix it well(makes the vada more crunchy).
  4. In a flat surface place a polythene sheet(other alternatives include wet cloth,plantain cloth) take a ball of the dough, place it on the sheet and spread the dough with your middle,index and ring fingers and place a hole in the center.
  5. Now slip the vada in to heated oil and deep fry for a crispy hot vada.
These vadas have a good shelf life as they are devoid of moisture and store it in a airtight container.
